I thought VARYG releases generally have subtitle tracks, but this one was completely devoid of subtitles

Because there are no subs for this yet and it's actually been corrected to be listed as a raw on nyaa.
Netflix subs and dubs are generally like a 6 month delay for Nanatsu.

That's because they put it under the wrong category. This will only get official subs next year.
