As John implies, the events chronologically are Fate Zero (broadcast 2011-12) then Fate Stay Night (broadcast 2006). As to which series to watch first, I think the right answer is not so certain. To avoid any spoiling, I will just say only this: If you think this series is about the Grail, then watch it chronologically. If you think it's about Saber, then watch it in broadcast order.

Which means you won't know if you got it right until your second viewing. Sorry.

Fate/Stay Night TV-2 is a remake (can't wait for this), Unlimited Blade Works is an alternate take (good story IMO), Carnival Phantasm funny and silly, Kaleid Illya interesting take on Illyasviel von Einsbern. Fate/Prototype, interesting would could have been.

If you want an idea of the animation for F/SN 2 check out the intros to the PS Vita port of Realta Nua. Gorgeous!!
