Where do you find the Japanese sub that you use to make the English translation?

There is very little hobby translations being done these days, the English subs come from the studio or other post-production facilities.

In the old days, you might get the closed captions from the Japanese broadcast and use that as the base to translate from.

I lived in Japan and I would like to watch the episode with original subtitles in Japanese, but unfortunately I can't find those anywere :(

For current releases you might need to access TokyoMX or such and get the closed captions.

For not-current releases and Japanese subs, the following source is back after an absence. I suggest downloading everything of interest and not assume the source will not disappear again:
